Food is biodegradable, but the microbes that decompose it need oxygen to function. In the oxygen-deprived environment of the landfill, decomposition releases methane, which is a more potent greenhouse gas than carbon dioxide. The EPA recommends composting food waste instead of putting it in landfills because when food waste is exposed to oxygen, microbes are able to decompose it without releasing methane. Composting also improves carbon sequestration and improves soil quality.
